Mix ⅓ cup apple-pecan butter, ¼ cup mild BBQ sauce, 1 tbsp apple cider vinegar, 1 tbsp Worcestershire sauce, 1 tbsp Dijon mustard, 1 tsp soy sauce, and ½ tsp garlic powder. Thin with 1–2 tbsp water. Taste for apple-forward, sweet-savory balance; add 1–2 tsp more vinegar if overly sweet. Before any brush touches the chicken, reserve ¼ cup in a separate clean container for serving.

Preheat the pellet smoker to 225°F. Pecan, apple, cherry, or a mild hickory pellet works well. Use a grate-level thermometer if the controller temperature is unreliable.
